RubyBlue Featured Bartender for June 2016 

Richard Grimsey from Fluid-Voodoo cocktails and flair. These days you’ll find Richard behind the bar at Browns Restaurant & Champagne Bar in Derry City but he’s played an important part in many cocktail lists across NI.

Derry Based Richard has been supporting RubyBlue Spirits from 2010 and has shown us some incredibly creative Cocktails over the years. 

One of our favourite Cocktails pictured below was made with Fresh Watermelon, RubyBlue Potato vodka, white Zinfandel, lime, sugar and fresh thyme.

A beautiful Vodka Cocktail to enjoy at anytime of the day but especially nice while enjoying the Sunshine.

RubyBlue Potato Vodka St Patrick’s Day Cocktail

E|I|P|I|C Bar & Restaurant at Deanes Restaurant Belfast

50ml RubyBlue Potato Vodka
10ml Elderflower Liqueur
25ml Fresh Lime Juice
10ml Cane Syrup
50ml Pressed Apple Juice
Fresh Thyme
3 Dashes Aromatic Bitters

Shake all ingredients in a Cocktail Tin and Double Strain into a Pre-chilled Coupette glass, garnish with a sprig of thyme.
